Lions and Tigers and Bears, Oh MY! Animal Kingdom (Part I)
Over our last several visits Animal Kingdom has gone from my least favorite park to my favorite! We are rediscovering shows and rides we haven’t seen in years, the addition of the evening Rivers of Life show is great, and we are learning how to make use of a whole day in the park. Before Pandora and Rivers of Life we saw this as a half day park for us, we don’t like thrill rides such as Expedition Everest or Dinosaur! But, we love the animals and trails around the park.
One our “new” favorite things to do is to get an early – prior to opening or at opening reservation to Tusker House for breakfast. It is a nice chance for the family to meet the characters and to get us to the back of the park before the crowds and heat of the day. It was super hot…

Swiss Potato Soup
Yesterday I shared a recipe for Zopf bread (Swiss braided bread – click for link to recipe). When we make bread the first thing we want to make to go with it is soup! Hot fresh bread dipped in a creamy soup is pure heaven. So, we went with the Swiss theme and made Swiss Potato Soup.
Verdict:
It has bacon. What more can I say. Swiss cheese, potatoes, bacon? My kids love the themed meals. The cheese is light so it is not heavy on the cheese flavor but the bacon adds a nice salty flavor.
We served this with Zopf bread and add a green side salad for a complete meal.
Loaded Potato Salad
My family does not care for potato salad with mayonnaise. I love it but it is difficult for me to eat enough to want to make it for myself. We had bacon in the refrigerator the other day and my kids wanted loaded potatoes. Well, why not make it loaded potato salad? Both kids were up for it. I figured with enough bacon they would eat anything.
Verdict:
I was right. They loved the salad. The best part is you can serve it warm or cold! We ate it just after the potatoes cooked and it was delicious. But, then we refrigerated the leftovers and freshened it up with a little mayo and sour cream and it made it a whole new dish and it was good too. We had it with sausages and it made the perfect picnic meal.

Flying heron
Although herons resemble birds in some other families, such as the storks, ibises, spoonbills and cranes, they differ from these in flying with their necks retracted, not outstretched. I could still capture a beautiful heron flying with outstretched neck, although in the second picture he already pulled back his neck.
Despair
