Often the most difficult tasks to achieve, appear to be the easiest. As we struggle to succeed, it is easy to compare our skills and our progress with everyone else. We listen to advise from teachers, family members, and friends, without realizing their advice represents their choices. If we neglect to choose our path in favor of a consensus, we lose ourselves. Doubts cloud our judgment and we succumb to our insecurities and fears.
Honoring our authentic selves means determining what matters most. We must place less reliance on the opinions of those around us, since trying to satisfy everyone is a guaranteed way to please no one and to make ourselves miserable in the process. Regardless of our choices, we will never gain everyone’s approval. Releasing the need to subjugate our genuine desires is an important step towards discovering who we really are.

Six on Saturday: the First and the Last
Well, the last will be first for this Six on Saturday post, as a temperature down to minus 2°C last night will sadly have seen off the dahlias for this year. The photograph was taken quite early in the day but a mammoth effort from a weak November sun was doing what it could to clear the frosty evidence I had seen on my first ramble. It is not going to get any higher than 4°C today and these cold nights and chilly days can only get more frequent in the coming weeks – but that’s what we expect, and I am not complaining.
I was prepared for the temperature drop last night, however, and had set up the heaters in the greenhouse in readiness, plugging them in but sadly forgetting to switch them on! In the Coop it was 2°C and in the working greenhouse just below zero…brrr! All…

Chicken Gnocchi Soup

My husband went crazy over this creamy Chicken Gnocchi Soup! I have to admit it was very good! I always order the Chicken Gnocchi Soup whenever I eat at Olive Garden….yes I actually do eat out. I found a recipe from CopyKat Recipes that I adapted to my own taste. This was easy to make especially if you do the prep work ahead of time.

Ingredients
In a medium pan cook gnocchi according to package directions, drain and set aside.
Melt butter in a medium pan.
Add onion, celery and cook over medium heat until veggies are tender.
Whisk in the flour and let it cook for one minute.

Add the Half & Half and then chicken broth cooking each until thickened.
Add all of the rest of the ingredients, stir and heat until hot.

Ladle into a bowl and serve.
Panera Bread Broccoli Cheddar Soup

This is a copycat recipe of Panera Breads Broccoli Cheddar Soup. It turned out cheesy and VERY good! It tasted just like Panera Breads soup in my opinion. I found this recipe in the book “Six Sisters’ Stuff Copycat Cooking” which has many recipes so expect me to post some more.

Ingredients

In a small skillet over medium heat
melt 1 Tbsp. of butter and sauté the
diced onion until translucent, set aside.

In a large saucepan over medium heat,
whisk together the melted butter and
flour. Cook and stir for 2 – 3 minutes
until nutty brown and fragrant.

Whisk in 2 cups of half-n-half and chicken broth
until smooth. Reduce heat and simmer
for 10 minutes stirring frequently.

Add the broccoli, carrots and onions.

Stir, cover and cook on low for 25 minutes.

Stir in salt and pepper then remove

Last Days in Bali
I wrote a very long post last time so this one will be short. Not because it needs to be short, but sometimes the best things in life come from doing one thing you enjoy. For me it was a newly found love of surfing.
After we got back to Bali from Nusa Penida we collected our scooters and tried to decide what to do next.
We were keen to explore a bit more of Bali but at the same time the thought of going back to Kuta and spending a few last days surfing was also very tempting.
We chose the latter and it was probably the best decision we could make. It was nice to go back to Kuta and see the guys from the surf shop we previously spent time with.
