The American Dream

I have once again achieved the American Dream.  I closed on the house yesterday!  So after signing my life away, I am now in debt up to my eyeballs!  A true American dream!  🙂

I have been a very busy girl lately.  So please forgive my absence.  Things are progressing along.  I’m headed to the house this evening to take some measurements.  There is still a LOT to do before I move.  But I am just thrilled!

Yesterday morning, bright and early, I was at City Hall, waiting for the doors to open so I could get my water account set up with the city of Burleson.  While waiting, I had a few minutes to explore the immediate area.  The beautiful clock in the picture above is in “Old Town” Burleson, TX and immediately reminded me of my dear friend Audrey and her wonderful blog Minnesota Prairie Roots and photographs…

We did a small grocery shop this past weekend for some meat and essentials rather than our usual big monthly shop. We have some expenses coming up this month that we wanted to be sure we had enough in reserves to pay for. But, with boneless, skinless chicken breasts for $1.59 a pound? Couldn’t pass up that sale!

So, as we were prepping the meat for the freezer I had a bag of breasts cut into chunks left in the refrigerator. I knew I wanted some type of Asian dish but I had to figure out what I had in the pantry to use so there was no running to the store at the last-minute. Well, I ended up breaking that rule as we got 2/3rds of the way into cooking the dish and I opened the can of cornstarch to find 2 tablespoons instead of the 8 I needed…

Barbecue Pineapple Chicken

When we were taking inventory of our pantry recently I realized I had quite a few extra bottles of barbecue sauce on hand. I am trying to keep the grocery budget down so I decided that using some of the extra barbecue sauce was a must. A can on pineapple, an orange pepper, chicken breasts, and egg noodles and we are on our way to a delicious simple dinner!

Verdict:

This was super yummy AND super simple! This dish can be on the table in about 30-40 minutes. The barbecue sauce that I used adds a hint of heat with the sweetness from the pineapple that makes a super tasty dish.

I served this over egg noodles but rice would also be great. Add whatever vegetables you like to the dish. We served it with a side of green beans to complete the meal.

Crispy Honey BBQ Chicken Bites

We are always looking for ways to make simple meals that are a bit different to add a little bit of something to our everyday dishes. We eat quite a bit of chicken breast cut into bites and tenders and am always trying different ways to cook them or top them.

These would be great for a teen party or a hearty football snack!

Verdict:

These were pretty good. Not as crispy as I had hoped but still had a bit of texture to them. They tended to be a bit of a bite rather than a crunch. The barbecue sauce is sweet so you may wish to start with a bit less honey and add more to taste.

We served this with brown beans and baked potato chips to complete the meal.
