What’s Cooking in Gail’s Kitchen? Be Our Guest: Mini Caprese Skewers! Can you tell I’m trying to squeeze as many foods in my picnic basket as possible before Summer ends? For a quick veggie burst of flavor, these off-the-vine cherry tomatoes are a match made in heaven when paired with fresh basil. It doesn’t hurt that the marinated mozzarella balls are skewered together for lovely presentation. It’s all about the finger food.

MINI CAPRESE SKEWERS

Ingredients:

12 mozzarella balls

1-2 tablespoons olive oil

1/8 teaspoon Italian spice blend

24 fresh basil leaves

12 cherry tomatoes, halved

12 black olives, sliced

Olive oil for drizzling

Instructions:

In a shallow bowl, place mozzarella balls. Drizzle with olive oil; sprinkle with Italian spices. Toss cheese to cover well. Beginning with a cherry tomato half, thread tomato on a toothpick or skewer. Then place one basil leaf, followed by a marinated mozzarella ball. Finish…

Be Our Guest – Breakfast

This restaurant is always super busy and hard to get a reservation to.

The last time we were at Be Our Guest was shortly after it opened. At the time they had only been open about 2 months and I was not impressed with the food or the atmosphere. Everyone I knew raved about this restaurant while I thought at best it was meh. Now several years later we have decided to give it another chance. I was able to snag a breakfast reservation before park opening so I thought it was the perfect time to try it again.

After placing your order you are told to enter the hall and seat yourself. Um, okay. The hall was PACKED and noisy. It was dimly lit and I felt like I was again in a giant warehouse. Now around the edges and the ceiling it was gorgeous! Felt like you were…

I’m pleased to share that my short story, “The Night the Billado Block Burned Down,” has been published in the July 29th edition of Metaworker Literary Magazine. The impetus for the story was a 2005 fire in my hometown of Enosburg Falls, Vermont that destroyed one of the downtown blocks. I’ve written about two of the downtown blocks previously, the Perley Block in my debut novel, Telling Sonny, and the Ben Franklin Block in the short story, “Living in the Ben Franklin Block.”

I got to take some new flower photos yesterday!

These are mostly dark pink blossoms, with a touch of yellow on the bell shaped flower. There were lots of blooms on one plant. I even remembered to take a photo of the name of them! 🙂

I took this photo of Purple Fountain Grass against the bright blue of the hood of a parked car this afternoon. To my surprise, when I looked at the photo this evening, I discovered that there was the reflection of clouds on the hood of the car. I’ve played around with the color a little bit, both to emphasize the contrasts, and to have a little fun. But this isn’t far off from the original. The striking blue of the hood of the car was what made me think of creating an angle for the shot that would show the fountain grass against the car.

*Look closely in the bottom right hand corner and you will see the curve of the hood of the car. Look in the lower left hand corner and you will see some white in the background. That is one of the headlights.
