What to do when all you’ve got are the end slices of a loaf of bread, some salad stuff in the fridge, a can of tuna and a rumbling tummy? Improvise!

I love tuna salad, but it can turn out quite bland and dry if you’re not careful. So even though this dinner is anything but fancy and certainly not Instagram worthy; it features a really delicious tuna salad made with scraps form the pantry.

Who’s hungry? Vincent and I. This recipe serves two hungry hobos.

Ingredients

For the toastie

• 2 slices of bread
• 2 tsp butter
• 2 tbsp chutney
• quarter of a red onion, sliced
• 1 tomato, sliced
• 45 g white cheddar, sliced
• 2 slices chargrilled turkey
• 1 tbsp oreganum
• salt & pepper

For the tuna salad

• 1 pack salad leaves
• 1 can of tuna
• 340 g can of whole kernel corn
• 1 tbsp peppadews, chopped (keep some juice…

I wanted to make traditional braaibroodjies to accompany our braai last night, but realised a little too late that I didn’t have any tomatoes. What I did have were leftover sliced mushrooms and Woolies’ feta cheese with sundried-tomatoes and basil.

Improvise, I did! The result was a new tasty braaibroodjie combo.

Who’s hungry? Vincent and Roan each want 2, so this recipe serves up 4 delicious braaibroodjies.

Ingredients

• 1 red onion, sliced
• 100 g mushrooms, chopped
• 3 wheels of feta with sun-dried tomato & basil
• 100 g cheddar cheese, sliced
• 8 slices of bread
• margarine
• 150 ml chutney
• 40 ml sriracha mayo

Make “broodjies”

Spread margarine on 2 slices of bread.

Flip the slices of bread over so the margarine is on the outside. Then plop dollops of chutney and sriracha mayo on each slice.

Spread it all over.

Now add chopped onion to one slice.

I think we all have heard of what our goals should be in life whether that’s having a successful career, having a degree or even getting married. The flavors intensify ordinary ingredients by beginning with organic and aromatic extra virgin olive oils, which in turn, are infused with delightful natural flavors. Some oils contain the essence of herbs, while others may be crushed with fresh citrus or toasted seeds. Be adventurous. Visit a specialty store where premium olive oils and balsamic vinegars are sold. Most stores offer samples to encourage “taste testing”. One of my favorites is Lime Olive Oil and Strawberry Balsamic Vinegar. Another is Sicilian Lemon Olive Oil paired with Pomegranate Balsamic Vinegar. Recently I added an Italian Black Truffle Oil to my collection. I was told it tastes divine drizzled over popcorn or as a finishing oil on pizza. I can’t wait!
